Description
Tête de Moine AOP is a semi-hard Swiss cheese with a cylindrical washed rind weighing approximately 800g. This specialty is made in accordance with ancient traditions in village cheese dairies using fresh mountain milk from cows fed on non-silage fodder. It is there, on pine boards, that the aromas develop during a refining of at least 2 and a half months.
Tête de Moine AOP comes in three varieties; Tête de Moine AOP Classic, Tête de Moine AOP Réserve and Tête de Moine AOP Extra. The Tête de Moine AOP Réserve differs from the Tête de Moine AOP Classic by its longer ripening which gives it more full-bodied flavors as well as a finer paste. To enchant your palate, the Tête de Moine AOP must not be cut but scraped using a device such as the Girolle® or the Pirouette®‚ in fine rosettes allowing the development of all its aroma. The Tête de Moine AOP can also be scraped with a knife.
