Emmentaler
Cave-aged Emmentaler DPO is an exceptional cheese. It is the cheese of choice for true gourmets.
After four months, the Emmentaler wheels selected by the Master Cheesemakers are transferred to a natural cave in the soft sandstone, also called molasse. The cheese is matured there for a long time in an atmosphere highly charged with humidity. The cold rock, whose walls harbor a very special microflora, offers ideal conditions for maturing for at least eight additional months. In this constant atmosphere – 95% relative humidity and a temperature of 13°C – cave-aged Emmentaler AOP gradually develops a very distinctive flavor while its rind slowly takes on its characteristic black color.
